Enjoy breakfast outside this Mother’s Day with a fruity parfait.

What a better way to spoil your mum than a Sunday morning coffee and breaky outside? These breakfast parfaits are super easy to make, healthy and look delightful. They’re even easy enough for the kids to make on their own.

Make them the night before in a jar so the oats soak up the yoghurty goodness and they’re ready for your everyday adventure outdoors.

What you’ll need:

Recipe makes 1 or 2 small serves

170g Greek yoghurt (or coconut yoghurt if you’re dairy-free)

1 tsp vanilla extract

1/3 cup whole oats

2 tsp. chia seeds

2 tablespoons of milk (dairy, soy or nut milk)

1 cup of frozen fruit (we’ve used berries and mango)

1 tbsp. shredded coconut

1 tbsp. almond flakes

To make the breakfast parfait:

In a bowl, mix yoghurt, vanilla, oats, chia seeds and milk together until well combined.

In a mason jar, pour in half of the oat mix and add half of the frozen fruit on top. Layer again with the oat mix before adding the remaining fruit.

Place in the fridge overnight.

In the morning, sprinkle the top of your parfait with coconut and almond flakes to add a little extra crunch.

And it’s as easy as that.
