Cool off in the backyard with one our Banana and Macadamia Nut Popsicles. 

Simple to make, these ice creams will satisfy the sweet tooth of big and little people, without being loaded with unhealthy calories.


What you’ll need

2 large, ripe bananas (the riper they are, the more sweetness)
1 cup of full-fat coconut milk or cream
1 tsp vanilla extract
100grams macadamias halved or chopped

What to do

In a blender, process the bananas, coconut milk and vanilla until smooth. Pour into a bowl.

In a dry pan, toast the macadamias until golden. Fold the macadamia nuts into the banana & coconut mix.

Pour into your ice cream moulds and place in the freezer. Once frozen, allow to soften slightly before serving.


For a little decadence, melt some dark chocolate in a glass bowl over boiling water. Allow to cool slightly before dipping your frozen ice creams into the chocolate sauce. Lay on a baking tray and return to the freezer to harden slightly.

Recipe makes 6-8 popsicles.
