blueberry thyme cocktails

Okay, so we know it’s only Monday but it’s never too early to plan our Friday night cocktails right?

We stumbled across this delicious blueberry, honey and thyme cocktail recipe from Dishing Up The Dirt and our mouths started to water. Not only are the ingredients some of our favourites, but Andrea Bemis crafted this cocktail using all farm fresh produce from her own land and her neighbour’s bee hives.

We don’t expect you to harvest your own blueberries, but you might be able to pick your own thyme! Here’s the easy, yet delicious recipe for you to try:

To make the Blueberry, honey, thyme syrup, you’ll need:

1 cup fresh blueberries
1/2 cup honey
1 cup water
4 fresh thyme sprigs

To make the cocktail, you’ll need:

2 cups vodka
3/4 cup blueberry syrup (recipe above)
3 1/2 tbsp fresh lemon juice
2 cups soda water

To garnish the cocktails, you’ll need:

Frozen blueberries (they’ll act like ice cubes!)
Fresh thyme sprigs


What you need to do:

To make the syrup, combine together the blueberries, honey and water in a small saucepan. Bring to a boil and stir a few times to dissolve the honey. Reduce heat to a low simmer and add the 4 thyme sprigs.

Keep simmering on low heat for about 12 minutes. Strain the syrup into a jar, pressing the blueberries with the back of a wooden spoon to get all the yummy juice out.

To make the cocktail, in a jug combine the vodka, roughly 3/4 cup of the syrup (more or less depending on sweet preference), lemon juice and soda water. Serve over ice, throw in the blueberries and garnish with extra thyme.


This recipe makes one jug. Andrea suggest you adjust the measurements to your taste preference so add a little extra syrup for more sweetness or a dash more of vodka if you need it a little stronger.
