Ease to cook and delicious, these grilled corn cobs are the ideal backyard BBQ food.
The entertaining season is upon us and while many plan lavish dinners, we’re all about spending more time enjoy good company and grazing on tasty food rather than slaving away in the kitchen.
We’re picturing generous platters and boards of moreish delights, where guests can pick and choose. Food that can be cooked outdoors on the BBQ and eaten while holding a refreshing beverage in the other hand.
Sweet and crunchy grilled corn is always a crowd-pleaser and paired with a coconut, lime dressing you’ve got the perfect summer backyard grub.
What you’ll need
- Fresh corn ears (1 per person)
- 1 cup coconut milk
- 1 lime juiced, plus limes to serve
- 1-2 tsp honey (depending on your sweet tooth)
- 1 small handful of coriander, finely chopped
- 2 spring onions, finely chopped
- Salt to taste
What to do
To make the dressing:
In a small blender add the lime juice, honey, coriander and spring onions. Pulse a few times before adding the coconut milk. Pulse a couple more times to mix together. Season with salt and adjust flavours to taste.
Pour in a jar, ready to serve.
To make the grilled corn:
Pull back the outer husks from the ear to the base and remove the silk from the corn by hand.
Tie up the outer husks with some kitchen twine or simply wrap around strips of husk for an organic look. Spray the corn with olive oil before placing them on a hot grill.
Grill for 10 -15 minutes, until nicely browned. Watch out for the popping corn!
Allow the husks to hang over the edge of the grill and use them as handles to turn the corn while grilling.
To serve, lay the grilled corn on a large platter and drizzle with the coconut, lime dressing. Finish them off with a generous squeeze of lime and a sprinkle of fresh coriander.
